Manage your fields through an in-game menu! LCtrl + LAlt + H opens the list of the 9 closest fields (with hectares and distance). Choose the field and action: [1-9] PLANT any mature crop on the map; HARVEST the entire field immediately, with the money going straight into the account; CLEAR the field.
